Hot Las Vegas Openings You May Have Missed, December-January 2026

Las Vegas’s dining scene moves quickly — powerhouse casinos usher in new multi-million behemoths with Champagne and sparklers while off-Strip restaurants continue to open doors in homey neighborhood strip malls or in the fast-growing Arts District. Things have been especially busy over the past couple months with well over a dozen openings. Here is a list of new and notable spots. Ada’s

James Trees has officially moved his popular wine bar from Summerlin to the Arts District. Fans of Ada’s, now open in the chef’s original Esther’s Kitchen space, will find a similar menu (think tagliatelle in a lemon cream with Pecorino or roasted chicken served with kale and white beans) and the same award-winning wine list: Ada’s was just named a James Beard semifinalist for outstanding wine program. 

Amata Modern Thai 

Former Hakkasan executive chef Pinyo Saewu has added a personal touch to Thai classics at Amata Modern Thai. In addition to stir-fried noodles and bone marrow short rib noodle soup, Amata brings the heat with a spicy beef carpaccio crowned with herb salad, and signature dishes such as crispy duck braised for eight hours and twice fried, as well as sweet and sour branzino.  Noodle pull from Amata Modern Thai in Las Vegas.

Eggslut 

Speaking of Rio, the fluffy brioche and runny egg sandwiches that made Eggslut a cult classic have arrived at the off-Strip resort. The chain opened a counter-service outpost just off the resort lobby December 19 where it began slinging cage-free egg sandwiches like its famous Fairfax that has a soft scrambled egg, melty cheddar cheese, chives, and caramelized onions.   

Forke Restaurant 

Forke, a French-American bistro opened on December 3 on Sahara Avenue near Palace Station. The restaurant focuses on classic French fare with dishes such as buttery escargot, rich beef Bourguignon, and a lobster tail swimming in garlic butter. Other signatures from chef Miguel Martinez include a decadent foie gras burger and seared duck breast with roasted vegetables. 

Guerrilla Pizza Company

Guerrilla Pizza has a new outpost in downtown Las Vegas. Following a humble start offering free pizzas from his home kitchen during the pandemic to toiling a tiny kitchen at Hard Hat Lounge, Robby Cunningham is now firing up his 8-inch by 10-inch Detroit-style pizzas in a conveyor oven housed in the Soho Lofts space. Pizza lovers can build their own square, grab a classic Detroit deep dish or signatures like the Pig Show with barbecued pulled pork. The Coney Dog — the pizza version of the infamous Michigan hot dog favorite — seems worth trying, too.   

How Ya Dough’n

The Pistachio Pie, a crunchy, nutty pizza with truffle oil and honey, has arrived in Las Vegas. The signature pizza from husband-and-wife team Garett and Gabby Goodman of How Ya Dough’n is one of several hand-tossed sourdough pies on a menu that also includes chicken wings, meatballs, and Dough Boys — buttery Parmesan bites to dunk in a creamy vodka sauce. Tucked away on a third-floor rooftop, the pizzeria is the first restaurant to debut at the BLVD Las Vegas district (across from the ARIA Resort) and is located steps away from what will be the largest In-n-Out Burger in the U.S. when it opens this spring.    Pizza in bright sunlight from How Ya Dough’n in Las Vegas.

Milk Bread

Vegas’s new bakery destination Milk Bread takes its name from the soft fluffy Japanese bread but blends Filipino flavors into its sweet treats. Find pastry chef Yuka Takamizawa’s shokupandesal, a marriage of pillowy Japanese milk bread with the sweet Filipino breakfast roll pandesal. All breads, cakes, and other baked goods are made fresh daily at the 30-seat cafe. 

The Kitchen Table

The Kitchen Table has replaced Hash House A Go Go at Rio Hotel and Casino as the resort’s all encompassing go-to spot for breakfast and lunch. Following Hash House’s surprise closing, the new Rio-run restaurant opened in the space with a morning menu offering skillets, fried chicken and biscuits, and specialty pancakes like red velvet, ube, and banana matcha. For those craving stiffer morning drinks, the bar serves mimosa and bloody Mary flights.  

The Tiki Bar 

The Tiki Bar is open: the Excalibur has converted a little-used lounge into a quaint tiki-style destination. The menu has tropical drinks served in tiki mugs; scorpion bowls meant for sharing; and, of course, a swirled frozen pineapple Dole whip dessert. During Happy Hour (daily 5 p.m. to 7 p.m.) tiki cocktails and frozen daiquiris sell for $8 each. 

With Love, Always

Viral smash burger spot With Love, Always has begun crushing burgers on the grill at its new spot at the Bend with another location set to open soon in the food court at Red Rock Resort. The shop’s menu is simple: crispy cheeseburgers, shoestring fries, and soft-serve custard.  Glaring tiki mug positioned against a faux tropical backdrop.
