The Biggest Las Vegas Restaurant Openings, September 2025

Las Vegas’s dining scene moves quickly — powerhouse casinos usher in new behemoths with Champagne and sparklers while off-Strip restaurants continue to open doors in homey neighborhood strip malls. Here is a list of new and notable spots that opened in Las Vegas recently. For the best restaurants in town, check out Eater Las Vegas’s Essential 38 or Eater’s guide to eating and drinking in Las Vegas.
Bazaar Meat by José Andrés — The Strip
In the days leading up to Bazaar Meat’s September 4 opening, chef José Andrés told Eater he felt excited to bring the restaurant to the “50-yard line of the Las Vegas Strip.” The move, from its decade-long home at Sahara Las Vegas to its massive new palace at the Palazzo, allows Andrés to tap into conventioneers and Sphere concert-goers. Many of those familiar dishes — caviar cones, crisp suckling pig, and tender cuts of Wagyu beef — star on the new menu, which also includes a raw bar and cotton candy foie gras. And in a nod to its new neighbor, Bazaar Meat has introduced a sweet treat called Sphere Graffiti, a chocolate dome guests crack open to reveal the miniature desserts hidden inside.
Nom Wah — Summerlin
New York City’s oldest dim sum restaurant, Nom Wah, is now serving its signature dumplings and Cantonese-style dim sum in the Summerlin suburbs. The century-old restaurant (it originally debuted in the Big Apple in 1920) steamed its first Las Vegas dumplings on September 13 at its new location inside JW Marriott Las Vegas Resort and Spa. In addition to dumplings, the menu consists of classics like egg fried rice, lo mein noodles, and a number of fluffy buns you can order stuffed with crispy chicken, Peking duck or sweet chili tofu. Honor its tea parlor origins by ordering a pot of hot jasmine tea with any order.
Cymbiotika Wellness Bar — The Strip
Fast-casual health food destination Cymbiotika Wellness Bar opened at Fontainebleau Las Vegas on August 29. Located on the second level of the resort in the Promenade Food Hall, Cymbiotika serves nutrient-rich smoothies, fresh juices, açai bowls, and salads and wraps featuring southwest blackened chicken or spicy miso salmon.
Clique Bar and Lounge — The Strip
Clique Bar and Lounge has a sleek new look. The cocktail lounge, which debuted at the Cosmopolitan in 2015, welcomed visitors back recently following a four-month remodel that resulted in a space dressed in copper and amber hues with gold accents; a statement chandelier of handcrafted gold flowers surrounds a disco ball suspended from the ceiling. The bar’s mixologists have created an impressive list of signature “Clique Bait” drinks such as the Mango Sunfire, a spicy mango vodka lemonade that pairs well with the dozen or so light bites on the menu. These include meatballs, made with Wagyu beef and Ibérico pork, mini lobster rolls, and fiery bang bang shrimp.
Puffy Cotton Candy — Town Square
It will be hard keeping kids away from this spot: Puffy Cotton Candy, situated near the children’s playground at Town Square, features whimsical characters sure to catch their eye. Founded in 2022 (and rapidly expanding across the U.S.), Puffy Cotton Candy artfully spins colorful, sugary confections in the shape of cartoon-like characters resembling a rainbow unicorn, fuzzy red fox, pink pig, and a wide-eyed panda.
First Watch — Northridge
First Watch, a breakfast and lunch institution with more than 600 locations in 32 states, made its Nevada debut in North Las Vegas on September 15. The 4,400-square-foot restaurant serves fresh pressed juices, such as the kale-apple tonic, along with egg white omelets, and power wraps for health-conscious diners. The spot’s favorites include bright lemon ricotta pancakes; an herbaceous pesto chicken quinoa bowl; and its signature sweet with heat treat, Million Dollar Bacon, coated in brown sugar, cayenne, and maple syrup.
Leticia’s Cocina and Cantina — Winchester
Local chef and restaurateur Leticia Mitchell opened Leticia’s Cocina and Cantina at Boulder Station Hotel and Casino on August 27, her fourth restaurant and second partnership with Stations Casinos. The cantina was built to resemble a Mexican hacienda with large flowers painted on the homey white exterior wall and string lights dripping from the ceiling in a dining room that has the feel of a courtyard patio. Mitchell insists on only serving freshly made tortillas and relies heavily on family recipes. That means every dish — from the roasted poblano soup to the mole chilaquiles, and quesabirria tacos — feels intentional. Ask about the Comida Corrida menu, a daily three-course special approachably priced at $18.
Pachi-Pachi — Downtown
Branden Powers, the founder and former owner of the Golden Tiki, is part of a team bringing a flashy Japanese-style cocktail lounge to downtown Las Vegas. Pachi-Pachi is a high-energy, neon space filled with local art, crystals, and the smell of burning sage. The cocktail menu features color-changing drinks, a Wagyu smoked old fashioned, and several zero-proof, low-priced ($7) mocktails. On the food side, floating glass noodles stand out as a centerpiece dish but the fried deviled eggs; sandos (egg salad, chicken katsu, and steak); and messy bomb burger, served facedown in Japanese beer cheese, deserve a look.
