On Saturday, May 24 at 6 p.m., Cosmopolitan’s executive chef Mark Crane will offer first tastes of the restaurant that is set to open later this summer. Crane says the restaurant fills the burger-shaped hole left by Holsteins, which closed in 2024. The burgers here are made with thin blends of ground chuck and brisket that are smashed until crispy with nearly caramelized edges, lettuce, tomato, and raw onion, and a citrusy sauce of yuzu and sesame oil. The one-day pop-up will also serve seasoned fries dusted in furikake and ice cream concretes in nostalgic flavors like strawberry and Oreo. The first 25 people in line on May 24 will score complimentary burgers for a year.
