Group Behind Carbone Is Taking Chicken Parm to the Food Hall

Michelin-starred chefs Mario Carbone and Rich Torrisi — and their Major Food Group — are launching their fast-casual Italian-American mini-chain, Parm Italian, inside the Proper Eats Food Hall at the Aria. While Carbone at the Aria is among the hardest reservations to nab in Las Vegas, Parm serves up Italian-American comfort classics that chefs Carbone and Torrisi grew up with — and it’s located just down the hall from its powerhouse predecessor. Its most popular dish, the chicken parm sandwich ($16), is slathered in melted cheese between seeded Italian bread. The menu will also have rotini in spicy vodka sauce ($18), an Italian sandwich ($16) with five meats, spicy sauce, and Italian dressing, and homemade meatballs ($8). The original Parm opened in New York City’s Little Italy in 2011 and has since expanded to ten cities. It joins other restaurant spaces in the Proper Eats area, including fellow New York import, Egghead, DJ Steve Aoki’s Pizzaoki, and the sushi spot Temaki. Parm is going into the space vacated by the Portland-based Mediterranean restaurant Shalom Y’all, one of the first restaurants to open in the hall. It closed on April 14.
