A New Burger Spot Smashes Onto the Las Vegas Strip

The latest entrant is the Cosmopolitan, which will open its new smash burger restaurant this summer, next door to where Holstein’s served up burgers and shakes from 2010 until last year. Naughty Patty’s will churn out a small menu of burgers with lacy edges, crispy grilled cheese sandwiches, and seasoned fries when it debuts as the resort’s only dedicated burger restaurant. Smash burgers are taking over both on-Strip and off. The guys behind Sorry Not Sorry maintain a line out the door at With Love, Always — even on weekday nights. The No Pants burger stand at Caesars Palace remains one of the best burgers on the Strip. And even beloved pizzerias like Yukon Pizza have gotten in on topping soft buns with doily-thin patties, tangy sauce, and cheese. The version at Naughty Patty’s gets a thin patty with nearly caramelized edges, lettuce, tomato, and raw onion, and a citrusy sauce of yuzu and sesame oil. Add-ons like avocado will be available. The concise menu will also have a crunchy grilled cheese fried in mayonnaise, hot dogs slathered in a chili-like sauce, and crunchy fries in a furikake seasoning. Ice cream concretes will be available in flavors like strawberry and Oreo cookie. Mark Crane, the executive chef for the Cosmopolitan, says that smash burgers are here to stay, rather than a short-term trend. “I think people are into it for a while because of the flavor you’re able to generate,” he says. “Also the speed that you’re able to turn it around. For us, it takes three minutes [to cook] a patty.” He also says that Naughty Patty’s fills the void left by Holstein’s, which closed in July of 2024 — though it is reopening in downtown this spring. The former Holstein’s space was transformed into the beachy Mexican restaurant Amaya. Naughty Patty’s, near the Block 16 Urban Food Hall, will lean into an old-school diner aesthetic with retro art. And a cartoon of the namesake Patty pin-up character gives the middle finger on the inside of each burger’s cardboard box. Naughty, indeed.
