The New York location also offers a full menu of reserve cuts from Japan with wagyu from the Miyazaki, Miyagi, Kagoshima, and Hyogo prefectures. The signature Butcher’s Feast comes with a spread of USDA Prime and American Wagyu beef, plus banchan, kimchi stew, scallion salad with gochugaru vinaigrette, and vanilla ice cream topped with soy sauce caramel. The bar comes from Corner Bar Management, the team behind bars like the Laundry Room and Commonwealth. For a $750 initiation fee and $3,000 a year, members will have access to private spaces, no-reservation tables, a complimentary monthly bottle of wine, and other perks in the opulent, but still tasteful, space. Juyoung Kang (Collins Bar, Laundry Room, Corner Bar) leads the bar as the beverage manager, whipping up drinks like a Thai tom kha inspired fizz and the Big in Japan, a kefir-washed clarified punch. Holsteins

After closing at the Cosmopolitan in May 2024, burger and shake spot Holsteins is being revived off-Strip in the Las Vegas Arts District. Holsteins is best known for its over-the-top burgers like a dry-aged burger with smoked bacon, aged goat cheese, and confit; a galbi-glazed patty with crispy yams; and the Billionaire Burger with foie gras. Alongside the burgers, Holsteins serves a s’mores shake with marshmallow vodka and a frozen grasshopper cocktail. The new 2,800-square-foot location will offer a full bar with signature cocktails and rotating beers. Expect lunch and dinner service daily.

Nomikai
Location: The Venetian

Sushi counter, speakeasy, and handroll bar Nomikai is slated to join the restaurant lineup at the Venetian this spring; the name is a mash-up of two Japanese words, meaning “to drink” and “to gather.” The restaurant will open on Restaurant Row, which is also home to Delmonico Steakhouse, Yardbird, and Chica. Chef Setsuji Mitsui (Blue Ribbon Sushi) will helm the sushi counter, serving hand rolls, nigiri, and cocktails. Expect made-to-order take-out boxes of sushi alongside dine-in options. A few months after the 20-person sushi counter opens, Nomikai will open the attached lounge, which seats 35.
Pisces Bar and Seafare
Location: The Wynn
Projected Opening: Spring
Major Players: Martin Heierling, Mariena Mercer Boarini, Jennifer Yee
Pisces Bar and Seafare, a new seafood restaurant, will swim into the Wynn this spring. The restaurant will take over the former Lakeside space, which was supposed to be chef Fabio Trabocchi’s Fiola Mare until plans fell through. Executive chef Martin Heierling will build a seafood-focused menu with caviar, crudo, seafood platters, fresh pasta, and dry-aged fish. Mariena Mercer Boarini will design a Mediterranean cocktail menu to complement the food, while the Wynn’s executive pastry chef Jennifer Yee has been tapped for desserts. Expect a redesigned interior with mosaic floors, mirrored portholes, and embroidered velvet walls.
Via Via Food Hall
Location: The Venetian

One of the most exciting names to join the Venetian’s forthcoming food hall Via Via is Mason Hereford’s innovative New Orleans sandwich shop Turkey and the Wolf. The restaurant is known for its often-rotating menu of sandwiches like a collard greens melt and fried bologna with cranberry and herb mayo. Also opening at Via Via are restaurants including the revival of Ray Garcia’s celebrated B.S. Taqueria, hot chicken specialist Howlin’ Rays, and New York slice shop Scarr’s Pizza.
