The Wynn Taps a New Seafood Restaurant After Previous Plans Fall Through

In 2024, the seafood restaurant closed to make way for Michelin-awarded chef Fabio Trabocchi’s Fiola Mare. Those plans fell through, and now the resort will debut Pisces Bar and Seafare this spring. Executive Chef Martin Heierling will helm the forthcoming seafood restaurant. Most recently with the Nobel 33 hospitality group and restaurants like Toca Madera in Las Vegas, Heierling is designing a menu with caviar and crudo, seafood platters, fresh pasta, and fish dry-aged in-house. Located on the shore of the resort’s Lake of Dreams with its regular shows of dancing lights and a singing frog, the Lakeside space is getting a redesign of reflective mosaic floors, embroidered velvet walls, mirrored portholes, a seafood display, and an expansive bar. Wynn Las Vegas’ mixologist Mariena Mercer Boarini will develop a Mediterranean-themed cocktail program and the resort’s executive pastry chef Jennifer Yee will spearhead the dessert menu. Karaoke and Award-Winning Boba Land in Chinatown Two new Chinatown debuts are shaking up Spring Mountain Road. Award-winning Taiwanese tea shop Chicha San Chen (5410 West Spring Mountain Road) has opened a Las Vegas location utilizing a patented Teapresso machine to steep delicate cups of green and jasmine tea. The menu also has bubble milk tea with fresh taro, oolong tea with milk, and fruit tea with pineapple and passionfruit — all served with a loop of hemp string for easy carrying. The full bar and kitchen showcase accompanying cocktails and sustenance like stinky tofu and spicy braised beef noodle soup. A New Brewery Opens in the Southwest Evolve Brewing by Aces & Ales introduces a new brewery to the Bend shopping center. Evolve (8680 West Sunset Road, E-100) takes over 9,000 square feet with a 10-barrel brewing system, a 300-seat brewery and taproom for dining, and 24 rotating tap lines.
