A Highly Anticipated Seafood Restaurant Calls Off Its Las Vegas Strip Debut
Fiola Mare Washington D.C. | Fiola Mare Plus, Las Vegas hosts a women’s hospitality conference and another Summerlin restaurant opens in Henderson One of the most-anticipated openings of 2025 had been a Mediterranean seafood restaurant slated to debut in the former Lakeside space at the Wynn resort. The Wynn announced back in July 2024 that James Beard and Michelin-awarded chef and restaurateur Fabio Trabocchi would open a Las Vegas location of his Florida restaurant, Fiola Mare. Plans included a raw bar at the entrance of the restaurant, opulent seafood towers, dishes prepared tableside, and a roving cart of daily catches from which diners could choose a fish and its preparation. Lakeside, which has sat empty on the Lake of Dreams since late July, was slated for a renovation of maritime-inspired designs and custom furnishings inspired by classic French and Italian designs from the 1940s and 1950s. But now Trabocchi has confirmed in an email to the Las Vegas Review-Journal that the restaurant is not moving forward with plans to open at the Wynn at this time. A representative for Wynn has not responded to Eater’s request for comment. Women in Hospitality Leadership Conference and Legacy Gala Chefs Angie Mar, Lorena Garcia, Esther Choi, and Cat Cora are slated to speak at activations and panels during a conference that will bring together hospitality and culinary professionals from Las Vegas and beyond. The inaugural Women in Hospitality Leadership Conference and Legacy Gala will take place at the Wynn on March 30 and March 31 with keynotes, workshops, networking, and mentorship opportunities for restaurateurs, managers, food and beverage directors, chefs, and industry leaders. Co-founder of Wynn Resorts, Elaine Wynn, and founder and co-founder of the Women’s Hospitality Initiative, Elizabeth Blau, will host a keynote conversation. To conclude the conference, the Legacy Gala will feature gourmet food from Las Vegas women-led restaurants. Tickets are on sale and the complete conference agenda is online. Another Summerlin Restaurant Debuts in Henderson On the heels of Flower Child and North Italia opening Henderson locations, another chain restaurant is making the move from Summerlin to the other side of the 15. Lazy Dog Cafe, a chain with several restaurants dotting Southern California, will open at 594 North Stephanie Street near Sunset Road on Wednesday, February 26 with popular dishes like barbecue bison meatloaf, bacon candy, and spicy tuna crispy rice for humans — and bowls of chicken breast and burger patties for dogs on the patio. Bellagio Reopens Its Noodle Restaurant Bellagio’s pan-Asian restaurant, Noodles, has reopened following its redesign. Taking inspiration from Hong Kong’s antiques market district, the room’s new architecture has Chinese windows, paravents, stone art, and lanterns — plus new booth seating for dinners of soy Chilean sea bass, char siew bao, Hong Kong egg noodle, and tableside dim sum.
