Bazaar Meat Eyes an August Opening at the Venetian Resort

In October 2024, chef José Andrés’s lauded steakhouse, Bazaar Meat, announced that it would close at the Sahara Las Vegas and migrate down Las Vegas Boulevard to reopen at the Palazzo at the Venetian Resort. The Sahara confirmed to Eater Las Vegas that Bazaar Meat is signed with the Sahara to stay open through June 30. And a representative for the Venetian told Eater Vegas that the resort is tracking toward an opening date in late August 2025. Since opening in 2014, Bazaar Meat has cemented itself as one of Las Vegas’s best steakhouses. Small bites have become icons in their own right — crispy chicken-bechamel fritters playfully served in a sneaker, delicate cones of créme fraîche and caviar, and squares of foie gras tucked into tufts of cotton candy. The dining room is an ode to all things carnivorous. Legs of jamón ibérico loom over a sushi counter-style meat bar. Open-fire grills in the middle of the dining room crackle and roar with cuts of Black Angus steak. And overhead chandeliers of antlers set the mood for tender suckling pig and heaping “Vaca Vieja” eight-year-old Holstein steaks. Its move to the Venetian is part of the resort’s $1.5 billion reinvestment project, which includes another steakhouse, Michelin-starred Korean barbecue restaurant Cote, set to debut in a 10,000-square-foot space later this year. Patrick Nichols, the president and CEO of the Venetian Resort told Eater Vegas that Bazaar Meat is slated for the 10,000-square-foot space in the Palazzo tower directly beneath Lavo. Before closing in 2016, that space was home to the restaurant-cum-car museum Dal Toro Ristorante. Nichols says there are also plans for neighboring space that used to be the 40/40 Club, Jay-Z’s short-lived sports bar and lounge. When Bazaar Meat opens, it will join the company of the property’s other steakhouses: Emeril Lagasse’s Delmonico Steakhouse, Wolfgang Puck’s Cut, and the double-decker Smith & Wollensky.
