Pinky’s by Vanderpump opened at the Flamingo Las Vegas on Friday, December 6 with a bold throwback design and drinks that demand to be photographed before sipped. Initially expected to open in summer 2024, Pinky’s deviates from the floral glam aesthetic of the Vanderpump Cocktail Garden at Caesars Palace and the stormy Parisien vibes of Vanderpump à Paris at the Paris Las Vegas with a more Art Deco style. With its vintage touches and geometric designs, Pinky’s old-school cool slots in nicely with the nearly 80-year-old casino. The bar top bears muted flamingo statues beneath blush-pink lampshades. Lush velvety love seats surround tables in a rear dining area. At Pinky’s, brunch is all flights of deviled eggs with assorted toppings like caviar and pickle slivers — or plates of crispy rice topped with salmon, tuna, and mango chile crab. Wagyu sliders come with a layer of sweet and tacky bacon jam and delicate shells border fruit tarts of kiwi, pineapple, and raspberries with color-coordinating cream fillings. The Daddy Issues peach spritz is topped with a tuft of cotton candy. A Pink Me Up strawberry martini has a touch of heat from jalapeño and the Less Depresso, More Espresso martini is served with a chocolate cookie and a miniature tiramisu brownie. The 7,000-square-foot Pinky’s has a centerpiece bar and a covered terrace conservatory that extends right out onto the Las Vegas Strip — its atrium lends a bright flush of daylight over the restaurant during brunch hours. At a brunch event on Friday morning, Lisa Vanderpump told Eater that while she isn’t a big cocktail drinker, the bloody mary with a blue cheese-stuffed olive is her favorite on the menu. “It’s very difficult to keep tasting everything all the time — trying it and sending it back and trying it again,” says Vanderpump, who described sampling a pull-apart bread with gruyere and honey butter on repeat. “There was a dress I wanted to wear last night and it was not working and it was because of that.” Vanderpump commented that she is already working on ideas for her next Las Vegas project, but provided no further details. And there is more in store for the Flamingo, with Vanderpump’s famous friend’s Gordon Ramsay Burger expected to open early next year next to Pinky’s.
